Ingredients

  • 16 frozen potstickers
  • 2 tbsp of vegetable oil
  • 1 onion sliced
  • 1 orange bell pepper sliced
  • 1 red bell pepper sliced
  • 1 carrot julienned
  • 2 cups of broccoli florets
  • 1 cup of snap peas
  • 1 tbsp of garlic minced
  • 1 tbsp of sesame oil
  • 1 tbsp of rice vinegar
  • 3 tbsp of soy sauce
  • 1 tbsp of sesame seeds for topping
  • 2 tbsp of scallions chopped (for topping)

Instructions

  • Step 1: Cook the Potstickers to Golden Perfection - Start by cooking your potstickers according to the package instructions. Some will have you boil them and some will suggest pan frying. I like to pan fry mine because you get those lightly crispy bottoms that add a lot of texture. Once they are cooked through, set them aside on a plate. Try not to snack on too many at this stage. I know it is tempting.
  • Step 2: Sauté the Onion for a Flavorful Base - Grab a large skillet and place it over medium high heat. Add the vegetable oil and let it warm up for a moment. Toss in the sliced onion and give it a stir. Let it cook for about three minutes, stirring occasionally. You want the onion to soften and start to turn slightly translucent. This step builds that first layer of flavor that everything else will sit on.
  • Step 3: Add the Vegetables and Build Texture - Now add the bell peppers, carrot, broccoli, and snap peas. Stir everything together so the vegetables are evenly coated in the oil. Let them cook for about five minutes, stirring as you go. You are looking for that sweet spot where the vegetables are tender but still have a bit of crunch. That contrast is what makes this dish so satisfying.
  • Step 4: Create the Savory Sauce - Once the vegetables are just about where you want them, add in the minced garlic, sesame oil, rice vinegar, and soy sauce.
